Like all nuts, seeds and grains, pili nuts contain phytic acid. If not removed through a pre-sprouting process, it can prevent optimal digestion and may cause bloating.

After maturing for 7 years, the tree bears dark purplish fruits when ripe – that looks much like a giant olive.
After dehydrating for days, the pili nuts are still raw, and is ready to enjoyed without any preservatives or additives!
The pili nut has a brown fibrous skin (testa) which is painstakingly removed by hand after pre-sprouting.
The hard shell (endocarp) holding the pili nut is individually cracked opened by hand with a special knife.
Pili fruit pulp is soft and creamy, traditionally eaten with fish sauce. The pulp is striped away by hand to reveal the hard shell.
