CAULI-PILI VEGAN MASH

Cauliflower is a brilliant low-carb alternative to potatoes, and they contain lots of phytonutrients too! Served as a lighter alternative to mash potatoes.

This recipe is:

INGREDIENTS

  • 450g cauliflower, chopped into florets

  • 60g Pili Pushers Unsalted pili nuts

  • 24g water 

  • ¼ teaspoon Himalayan pink salt 

  • Pinch of black pepper

Optional

  • 2-3 cloves of roasted garlic

  • 1 teaspoon fresh chopped thyme

 

 

METHOD

  • Fill a large saucepan with about an inch or two of water and insert a steamer basket

  • Bring the water to a boil, and add the cauliflower florets into the basket

  • Steam for 7 to 8 minutes or until fork tender

  • Blend pili nuts, Himalayan pink salt and water until it forms a smooth fluffy cream

  • Add drained cauliflower florets (optional: add garlic too) into the pili nut cream and continue to blend till combined and smooth

  • Sprinkle thyme and black pepper

PILI GREMOLATA

Gremolata is very simple to make and will transform any dish with its beautiful fragrance. Our take on a classic but our using pili nuts. The pili nuts lend a creamy umami flavour and texture – perfect as a dip or a sauce.

This recipe is:

INGREDIENTS

  • 45g Pili Pushers Unsalted pili nuts 

  • 20g Italian flat leaf parsley, washed and pat-dry

  • 2 tablespoons extra-virgin olive oil

  • 1-2 clove of garlic 

  • 1 teaspoon lemon juice

  • Zest from 1 lemon

  • Pinch of black pepper

  • Salt to taste 

 

METHOD

  • Place garlic in food processor and blend for 3 seconds.

  • Add parsley and blend for 2 seconds.

  • Scrape minced garlic and parsley into a bowl.

  • Add pili nuts into food processor and blend for 3 seconds to get small chunks.

  • Scrape pili nuts into garlic-parsley mixture.

  • Add EVOO, lemon zest, lemon juice, pepper, salt and stir to blend well. 

 

Notes: Pili nuts are soft and creamy, over blending them will result in a butter-like texture (which isn’t a bad thing). 

 

USES

Dips / Spreads

  • Use as a dip on toast, bruschetta, pita bread.

 

Sauce

  • Add onto hearty stews, or on roast or grilled meats.

 

Pasta

  • For use in pasta, you can thin the pili gremolata with an additional 1 to 2 tablespoons of extra-virgin olive oil.

  • After cooking pasta, drain most of the water leaving around 1 to 2 tablespoons of pasta water. Stir in pili gremolata and mix well. Serve hot.

GOLDEN PILI LATTE

Inspired by Ayurvedic medicine, turmeric milk has been drunk for centuries for its healing benefits. Here is our vegan version of a classic  - comforting, warm, and rich turmeric paired with nutritious pili nut milk with a hint of sweetness.

INGREDIENTS

  • 120ml water

  • 30g Pili Pushers Ginger & Turmeric pili nuts 

  • ½ teaspoon raw honey 

  • Pinch of black pepper

Optional

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon ground cardamom

  • Substitute raw honey with Anaya Trigona honey

 

 

METHOD

  • Place all ingredients into a food processor and blend for 3 minutes.

Enjoy unstrained or strained.

CACAO & COFFEE PILI SMOOTHIE

Give your mornings an extra boost by combining your coffee with raw cacao coated pili nuts. Perfect for those mornings where you need a quick energetic breakfast.

INGREDIENTS

  • 1 frozen banana

  • 2 tbsp cacao powder

  • 240ml coffee or espresso

  • 45g Pili Pushers Cacao & Coffee pili nuts (save a few for topping)

  • 1 cup unsweetened almond milk

 

 

METHOD

  • Place all ingredients in a blender. 

  • Blend on high, scraping down the sides with a rubber spatula, if necessary, until smooth, 1-2 minutes. 

  • Pour smoothie into two glasses and garnish with crushed Pili Pushers Cacao & Coffee pili nuts.

WHITE BEAN & PILI NUT HUMMUS

Hummus is not only rich in plant protein and healthy fats, but it is also a very versatile dip – perfect for all parties.

This recipe is:

INGREDIENTS

  • 400g sized-can of chickpeas or cannellini beans, liquid reserved

  • 1 large clove garlic, roughly chopped

  • 1 tablespoon olive oil, plus more for drizzling

  • 60g tahini

  • 45g Pili Pushers Himalayan Pink Salt pili nuts (save a few for topping)

  • Juice of 1 lemon

  • Salt and pepper, to taste

 

 

METHOD

  • In a food processor, combine beans, garlic, olive oil, tahini, lemon juice and pili nuts.

  • Blend on high, adding aquafaba one tablespoon at a time until hummus is creamy, about 45 seconds. 

  • Add salt and pepper and blend for 10-15 more seconds.

  • Serve hummus with a drizzle of olive oil, a sprinkle of pili nuts and veggies of your choice. 

 

  • Jazz up your dip with these topping ideas:

  • Sautéed mushrooms 

  • Caramelised onions

  • Roasted zucchini or eggplants

  • Green olives

  • Feta cheese (vegan or dairy)

  • Blend on high until smooth for about 1 minute. 

  • Pour smoothie into two glasses and garnish with crushed pili nuts or sliced bananas.
